Butterbean Bubble and Squeak

Ingredients

2kg mashed potato, prepared
500g leeks, blanched finely sliced
500g parsnips, blanched and finely sliced
500g cooked parsnips, finely chopped
1kg tinned butter beans, drained
4 tbsp mixed herbs
1l water
75g Bisto Reduced Salt Gravy Granules

Method

1. Preheat the oven to 180°C, 350°F gas mark 4.
2. In a bowl, mixed together the mashed potatoes, sliced leeks, parsnips, butter beans and mixed herbs. Divide
    into 40 and shape into patties.
3. Place into a greased baking dish.
4. Cook in the oven for 25 to 30 minutes or until golden brown and hot in the middle.
5. Bring water to the boil, whisk in Reduced Salt Gravy Granules and serve with the bubble and squeak.

This dish could be made into small bite size pieces and served as a grab and go offer with a drizzle of gravy.
