Potato and Garlic Soup

Ingredients
50ml olive oil, plus extra to drizzle when serving
2 large onions, chopped
2 large carrots, peeled and chopped
4 stalks celery, washed, chopped
6 cloves garlic, chopped
2l Bisto Vegetable Stock
2 bay leaves
White pepper to season
100g Smash Instant Mashed Potato

Method
Step one
Heat the olive oil. Fry the onion for three minutes until soft but without colour.
Step two
Add the carrots and celery and cook for a further 4 minutes until they are all soft.
Step three
Add the garlic, stock and bay leaves.
Step four
Simmer for 30 minutes or until the vegetables are soft.
Step five
Blend the soup, then add the Smash Instant Mashed Potato to flavour and thicken to the correct consistency.
Step six
Check and season with white pepper to taste. Serve drizzled with olive oil.
