French Onion Soup

Ingredients

75g butter
1.5kg onions, finely sliced
2 garlic cloves, finely chopped
25g plain white or wholemeal flour
40g Bisto Beef Bouillon Paste
2l boiling water
Black pepper to taste
10 French baguette slices
300g Gruyère cheese, finely grated

Method

Step one

Melt the butter in a saucepan. Add the onions and sweat off with a lid on until the onions are dark golden brown. Add the garlic and cook for 2 minutes to soften.

Step two

Stir in the flour and cook over a gentle heat, browning slightly.

Step three

Mix the Bisto Beef Bouillon Paste with the boiling water and gradually add to the onions. Simmer for 20 minutes until the onions are soft and correct the seasoning with black pepper.

Step four

Serve with a slice of French bread, topped with cheese and grilled. This is sometimes known as a flute or croute.

Tips

The more you darken your onions, the deeper the flavour will be. Adding a little tomato puree to the soup will give a little sweetness and a rounded flavour to the dish.
