Battered Halloumi with Greek Salsa

Ingredients

100g McDougalls Fish Batter Mix
20g McDougalls Plain Flour (seasoned with Salt and Pepper)
½ cucumber, deseeded and fine dice
1 red onion, peeled and diced
3 tomatoes, small dice
1tbsp olive oil
1 tsp oregano
1kg Halloumi

Method

Step one

Place the McDougalls Fish Batter Mix into a bowl fitted with a whisk and blend in the water on a slow speed. Scrape down and continue to whisk on a medium speed for 3 minutes, before placing in the fridge to rest for 30 minutes.

Step two

While it is resting make the Greek salsa by mixing together the cucumber, onion, diced tomato and season with the olive oil and oregano.

Step three

Ensure the Halloumi is dry and then coat in the seasoned flour.

Step four

Dip the Halloumi in the batter and then place into a deep fat fryer at 180°C for approximately 2 minutes or until golden brown and fully cooked.

Step five

Serve in small bowls, topped with the Greek salsa.

Tips

McDougalls Fish Batter is a great batter base you can make with sparkling water for a lighter batter.
