Chocolate and Banana Marble Cake

Ingredients

175g butter
175g caster sugar
3 eggs, lightly beaten
½ tsp vanilla extract
200g McDougalls Self-Raising Flour
3 bananas, mashed
2 tbs milk
30g McDougall’s Cocoa Powder

Method

Step one

Preheat the oven to 180°C, 350°F gas mark 4.

Step two

Grease and line a 2lb loaf tin.

Step three

Cream the butter and sugar in a large mixing bowl until very they are pale and fluffy. Add the beaten egg, a little at a time, whisking well after each addition. Then whisk in the vanilla extract.

Step four

Fold the McDougalls Self-Raising Flour gently into the butter and egg mixture. Then add the mashed banana and combine.

Step five

Divide the cake batter into two equal portions.

Step six

Add the milk and McDougall’s Cocoa Powder and mix into one half of the batter until combined.

Step seven

Spoon large blobs of each cake mixture into the prepared tin, alternating the flavours to give a marble effect. Bake for 50–60 minutes until the cake is springy to the touch and a wooden skewer inserted into the centre of the cake comes out clean.

Step eight

Allow the cake to cool in the tin for 10 minutes, then turn out onto a wire rack and cool completely before slicing.

Tips

This cake freezes really well. You can also make into smaller cakes or muffins.
