Ingredients

325g McDougalls plain flour
625ml Water
250g Butter
10 Eggs

Method

Step one

Place water and butter into a pan and put on a low heat.

Step two

Once the butter has melted, turn up the heat. Take the water to a rolling boil.

Step three

Remove from the heat, and immediately add the flour.

Step four

Beat with a wooden spoon until well combined.

Step five

Smooth the mixture onto a plate to cool and when cooled place in a bowl.

Step six

Beat the eggs.

Step seven

In small additions, add the beaten egg to the flour and butter mixture.

Step eight

Continue adding the egg, until a smooth dough forms, which comes away from the edges of the bowl.

Step nine

Spoon the mixture into a piping bag, and snip the end.

Step ten

Pipe onto a lined baking tray.

Step eleven

Take a little water on the end of your finger and smooth down any peaks.

Step twelve

Bake in a hot oven (200- 220c) for approximately 20-25 minutes, or until golden brown and crisp.
