Ingredients
For the Strawberry Daiquiri Cocktail Mix
450ml white rum
375g strawberry purée
75ml sugar syrup
75ml lime juice
For the Jelly
250g McDougalls Strawberry Vegan Jelly Crystals
700ml boiling water
For the Crystallised Lime Sugar
2 1/2 fresh limes, finely zested
50g caster sugar

Method
Step one
To prepare the strawberry daiquiri cocktail mix, combine the ingredients in a mixing glass with ice, stir well for about 20-30 seconds, then strain and set aside.
Step two
In a pan measure the McDougalls Strawberry Vegan Flavour Jelly Crystals and mix with the required quantity of boiling water. Mix well until the jelly crystals have dissolved.
Step three
Pour the cocktail mix into the jelly mix and stir well before dividing the mix between 10 martini glasses and place the glasses into a fridge to set.
Step four
Mix the lime zest and caster sugar for the cocktail garnish to create a crystallised lime sugar.
Step five
Garnish the strawberry daiquiri jellies with the lime sugar to order.
