Bubble and Squeak Croquettes

Ingredients

250g Smash Instant Mashed Potato
800ml water, boiling
600g cooked vegetables, chopped (swede, parsnips, carrots, cabbage, leeks)
100ml double cream
2 eggs
100g gluten free plain flour, plus extra for dusting
Salt and pepper

Method

Step one

In a bowl place the Smash Instant Mashed Potato, then pour over the boiling water and mix until smooth. Leave to cool.

Step two

Add the vegetables, cream, eggs and flour and mix to combine, then season to taste.

Step three

Divide the mix into 60g portions and roll them in barrel shapes. Dust with extra flour and then deep fry in batches at 180°C, 350°F, gas mark 4 until golden brown.
