Thai Sweet Chilli Stir Fry with Chicken

Ingredients
400g rice
50ml oil
600g chicken diced
4 onions, peeled and sliced
4 yellow peppers, sliced
4 red peppers, sliced
500g broccoli florets
220g bamboo shoots
1kg Sharwood's Thai Sweet Chilli Cooking Sauce
1 bunch spring onions, cut into 2cm pieces

Method
Step one
Cook the rice, following the on-pack instructions, drain well and reserve until needed.
Step two
Heat the oil in a large wok, stir fry the chicken, when cooked through remove from pan and keep warm.
Step three
Add the sliced onions and peppers to the wok and cook for 3-4 minutes.
Step four
Then add the broccoli florets, cover, and cook for 5 minutes. Then add the spring onions and bamboo shoots and cook for another 2 minutes.
Step five
Add the Sharwood’s Thai Sweet Chilli Cooking Sauce and bring to a light simmer, add the chicken back in.
Step six
Serve with rice.
