Spiced Beef Noodle Soup

Ingredients

2 tbsp vegetable oil
50g fresh ginger, peeled and grated
50g cloves garlic, peeled and grated
3 spring onions, cut into 5cm pieces
500g cooked dice beef, cut into 2cm chunks, or shredded
1 tbsp tomato paste
2 tsp sugar
120ml gluten free soy sauce
120ml Shaoxing wine
4 star anise
1 cinnamon stick
3 bay leaves
1 tbsp fennel seeds
1 tbsp cumin seeds
1 tsp coriander seeds
2 litres water
50g Bisto Professional Beef Bouillon Paste
900g rice noodles
500g bok choy, halved
30g fresh coriander, finely chopped
30g spring onions, finely chopped

This is a great alternative for a hearty lunch; you can use any green leaves in the broth. We chose rice noodles to keep this dish gluten free.  

Tips: You can top with a fried egg if you want to increase protein, ensure to add egg to the allergen on the menu if you do.  

Step One

Heat oil in a large pan. Add ginger, garlic and spring onions. Sauté until onions are translucent.  

Step Two

Add beef, tomato paste, sugar, gluten free soy sauce, and Shaoxing wine. Stir to coat meat. 

Step Three

Add the star anise, cinnamon, bay leaves, fennel seeds, cumin seeds and coriander seeds. 

Step Four

Add 2 litres of water and the Bisto Professional Beef Bouillon Paste and simmer for 10 minutes.  

Step Five

Cook noodles as per packet instructions. Then add the bok choy and blanch until tender. 

Step Six

Portion the noodles into the base of each bowl. Then ladle over the hot beef broth with beef pieces and bok choi. 

Step Seven

Top each portion with chopped coriander and spring onions.
