Braised Beef Brisket with Chive and Horseradish Dumplings, Braised Vegetables and Bisto Sauce

Ingredients

3kg beef brisket joint, tied
10g black pepper, cracked
10g smoked paprika
25g Bisto Beef Bouillon Paste
1l boiling water
400g carrot, diced
400g onion, diced
400g swede, diced
75g Bisto Reduced Salt Gravy Granules
10ml olive oil
250g onion, finely diced
5g mustard powder
560g self raising flour
275g Atora Vegetable Suet
1tbs fresh chives, chopped
5g horseradish sauce (*check for allergens)
Salt and black pepper
100ml cold water

Method

Step one

Combine the pepper and smoked paprika and rub into the beef joint.

Step two

Add the Bisto Beef Bouillon Paste to the boiling water.

Step three

Place the beef in a large pan, pour over the Bouillon and add the carrots and onion.

Step four

Cover the dish and cook on the stove, on a low heat for two hours, stirring occasionally.

Step five

Meanwhile, prepare the dumplings using the method below.

Step six

Add the swede and continue cooking for a further hour, until the meat is tender.

Step seven

Remove the meat from the pan.

Step eight

Sprinkle in the Bisto Reduced Salt Gravy Granules and stir until thickened.

Step nine

For the dumplings

Step ten

Fry the onion in the oil until brown and caramelised, then allow to cool.

Step eleven

Sieve the mustard powder and flour together.

Step twelve

Add the Atora Vegetable Suet, chives, horseradish and cooked onion, and season with salt and pepper.

Step thirteen

Sprinkle the water over all the ingredients and mix, adding a little more water if required, until all the mixture comes together to form a dough.

Step Fourteen

Divide the mixture into 20 and roll each one into a round ball, cover and allow to rest in the fridge for approx. 30 minutes.

Step Fifteen

Place the dumplings into the pot roast approximately 20 minutes before serving or alternatively steam in the oven for 20 minutes.
