Chicken Chasseur

Ingredients

20g Bisto Chicken Bouillon Paste
1l boiling water
20ml sunflower oil
1.5kg chicken portions
3 garlic cloves, crushed
300g shallots, chopped
225g button mushrooms
550ml white wine
3 tbs fresh tarragon, chopped
900g tinned chopped tomatoes
75g Bisto Chicken Gravy Granules
3 tbs fresh parsley, chopped

Method

Step one

Place the Bisto Chicken Bouillon Paste into a jug and add the boiling water to make the chicken stock.

Step two

Heat the oil in a large sauté pan, season the chicken and fry, browning all over, remove from the pan and keep warm.

Step three

In the same pan, fry the garlic and shallots until softened, add the mushrooms and cook for a further 4 minutes. Add the white wine and simmer until reduced by half, stir in the chopped tarragon, chopped tomato and chicken stock.

Step Four

Pour the sauce over the chicken portions, cover and cook at 180°C, 350°F gas mark 4 for about 45 minutes.

Step Five

Correct the consistency with the Bisto Chicken Granules. Sprinkle with the chopped parsley to serve.
