Cutlery Free Cheese and Tomato Biscuits

Ingredients

150g Cheddar, finely grated (reserve 30g for sprinkling)
200g McDougalls Plain Flour
½ tsp paprika
75g sundried tomatoes
¼ tsp black pepper, freshly ground
100g Atora Vegetable Suet
1 egg

Method

Step one

Preheat the oven to 200˚C, 400˚F gas mark 6. Lightly grease two large baking sheets.

Step two

Put the cheese into a mixing bowl. Add the flour, smoked paprika, sundried tomatoes, and black pepper, and mix to combine.

Step three

Stir through the Atora into the flour mix. When you have a crumbly mixture, stir in the egg with a knife.

Step four

Gather the dough into a ball and cut in half.

Step five

Roll out to 5mm thick and cut into 7cm circles.

Step six

Repeat with the rest of the dough and all the trimmings.

Step seven

Gently lift onto the baking sheets, leaving a little space between each one. Sprinkle them with the reserved cheese. Place the baking sheets in the oven and bake for 8 minutes. When cooked the cheese biscuits should be a very pale golden brown.

Step eight

Allow to cool for 5 minutes, before transferring to a wire rack to further cool.

Tips

You could try different cheeses. Why not try with some herbs like parsley or thyme?
