Ingredients

20ml oil
2 red peppers, sliced
300g chopped onion
100g broccoli
250g drained canned chopped tomatoes
125g Marvel Milk Powder
75g Paxo Sage & Onion Stuffing Mix
10 eggs, beaten
200g mature cheddar
Seasoning to taste

Method

Step one

Pre-heat the oven to 180°C, 350°F, gas mark 4.

Step two

Fry the peppers and onions in the oil until tender. Blanch the broccoli, drain and refresh.

Step three

Mix the drained tomatoes, Marvel Milk Powder and Paxo Sage & Onion Stuffing Mix together. Add the vegetables, the eggs, and half the cheese and combine. Place in a half gastronorm tray, top with the rest of the cheese, and bake for 25-30 minutes.

Step four

Cut into cubes and serve.

Tips

This recipe is for a vegetarian quiche. You can make it into a bacon quiche by swapping the peppers and broccoli for 300g chopped lean smoked bacon.
