Bolognese Beef and Chickpea Lasagne

Ingredients
50ml olive oil
2 onions finely, chopped
2 carrots finely, diced
2 celery sticks, finely diced
800g beef mince
800g chickpeas canned
1 jar Homepride Bolognese Sauce
500g pasta sheets dried
400ml white sauce
150g Mozzarella, diced
50g Parmesan cheese, grated

Method
Step 1
Pre heat the oven to 180°C, 350°F, gas mark 4.
Step 2
Heat the oil in a large saucepan. Gently cook the onions, carrots and celery until golden.
Step 3
Add the beef mince and fry cook for 10 minutes.
Step 4
Add Homepride Bolognese Sauce and chickpeas, cover and simmer for a further 10 minutes.
Step 5
In a large square tray layer the beef and chickpeas Bolognese sauce on the base, then pasta sheets for 3 layers.
Step 6
On the top layer of pasta, cover with white sauce and the mozzarella and parmesan.
Step 7
Bake in the pre-heated oven for 40 minutes until browned and piping hot.
Tips
If you want to you can swap the beef for a vegetarian mince or minced mushrooms for a vegetarian option.
