Bolognese Beef and Lentil Bake

Ingredients

50ml olive oil
2 onions, chopped
2 carrots, chopped
2 red peppers, chopped
500g beef mince
100g dry lentils (rinse before cooking)
1kg Homepride Bolognese Sauce
1kg large, sweet potatoes, peeled and chopped
200g grated cheese

Method

Step 1

Heat the oil in a large saucepan. Gently cook onions, carrots, and red peppers until golden.

Step 2

Add the beef mince, cook for 10 minutes, until it all browned.

Step 3

Cover the lentils with water and simmer in a pan until tender, reserve until needed.

Step 4

Add the Homepride Bolognese Sauce to the beef mince, cover and simmer for 20 minutes. Then add the lentils.

Step 5

Meanwhile, cover the sweet potatoes with water and simmer until tender, drain and mash.

Step 6

Place the cooked beef and lentil Bolognese into an overproof dish. Cover with the mashed sweet potato then sprinkle with cheese and bake for 30 minutes or until piping hot and golden browned.

Tips

Why not try serving the Bolognese in a baked potato.
