Honey and Thyme Roast Parsnips

Ingredients
750g parsnips peeled, cored and chopped
4 tbs beef dripping (or vegetable oil if preferred)
2 tbs fresh chopped thyme
3 tbs honey
salt and pepper to season

Method
Step one
Place a tray with the beef dripping in a preheated oven at 190°C, 375°F, gas mark 5 for a few minutes or until hot.
Step two
Remove the tray from the oven, place the parsnips in the fat, and give them a good stir to coat. Season with salt and pepper and sprinkle over the thyme.
Step three
Return to the oven and cook for 25 minutes. Remove from the oven, pour over the honey and stir to coat well. Return to the oven and cook for 5 minutes longer or until golden.
