Cocoa and Irish Cream Cheesecake

Ingredients
275g Bird’s Cheesecake Crumb Mix
190g butter
150ml cold water
425ml milk
325g Bird’s Cheesecake Filling Mix
50ml Irish cream

Method
Step one
Place the Bird’s Cheesecake Crumb Mix base into a saucepan with the butter, melt and blend well. Press into a round 20cm spring clip tin
Step two
Place the Irish cream, 3tbsp McDougall’s Cocoa Powder, water and milk into a bowl fitted with a whisk. Add the Bird’s Cheesecake Filling Mix and whisk on a slow speed, scrape down and whisk for a further 2 minutes on a medium speed.
Step three
Pour the mixture into the tin over the base, smooth over the top and chill well.
Step four
Once chilled, sprinkle with the remaining McDougall’s Cocoa Powder.
Tips
Garnish with grated chocolate.
