Ingredients

For the Chocolate Syrup
350ml water
300g caster sugar
85g McDougalls Cocoa Powder
1 pinch of salt
1 tsp vanilla extract
For the Martini
150ml homemade chocolate syrup
575ml Irish cream liquor
575ml chocolate liquor
Ice
shaved chocolate for garnish

Method

For the syrup:

Step one

Combine the water, caster sugar, McDougalls Cocoa Powder and salt in a saucepan over a medium heat.

Step two

Bring to the simmer until the syrup starts to thicken.

Step three

Remove from heat and stir in the vanilla extract.

Step four

Allow to cool and keep refrigerated until used.

For the Chocolate Martini:

Step one

Pour the chocolate syrup, Irish cream and chocolate liquor into a cocktail shaker with the ice and shake until blended.

Step two

Pour martini into a cocktail glass and garnish with shaved chocolate.

Tips

Add diced Morello cherries in Kirsch for extra texture
