Lime Ginger and Coconut Jelly with Ginger Biscuit

Ingredients
80g McDougalls No Added Sugar Lime Jelly
400ml coconut milk
520ml boiling water
2 tsp fresh ginger, grated
1 tbsp lime zest (optional)
25g desiccated coconut
20g stemmed ginger
10 ginger biscuits* check for allergens

Method
Step 1
Bring the water and coconut milk to the boil.
Add the McDougalls NAS Lime Jelly and stir well until fully dissolved.
Step 2
Add grated ginger and lime zest. Mix thoroughly.
Step 3
Pour into 10 jelly or pudding moulds.
Step 4
Chill for at least 1-2 hours or until fully set.
Step 5
Serve garnished with desiccated cocoanut and (optional) steamed ginger with a ginger biscuit on the side.
Tips
Use silicone moulds for easy turning out.
Ideal for fortified menus — bold flavour and creamy finish.
