Ingredients

For the cocktail mix
225ml gin
225ml Campari
225ml red sweet vermouth
For the Jelly
250g McDougalls Vegan Orange Flavour Jelly Crystals
700ml boiling water
675ml negroni mix
For the Toppings
3 fresh blood oranges
100g meringue, crushed

Method

Step one

To prepare the cocktail mix, combine the gin, Campari and red sweet vermouth in a mixing glass with ice. Stir well for about 20-30 seconds, then strain.

Step two

To make the jelly, measure the McDougalls Jelly Crystals and mix with the boiling water in a large jug. Mix well until the jelly crystals have dissolved.

Step three

Pour the cocktail mix into the jelly mix and stir well before dividing the mix between 10 rocks glasses.

Step four

Prepare the fresh oranges. Cut one and a half into wedges and using a blow torch, flame both sides of the wedges to give a torched effect. Place the wedges into the glasses and transfer to a fridge to set for 30 minutes.

Step five

Peel and segment the remaining one and a half oranges and cut the segments into small pieces.

Step six

Once the negroni jelly has set, place top with some of the fresh orange pieces and a sprinkle of crushed meringue.
