Method
Step one
In a pan, measure the McDougalls Orange Flavour Jelly Crystals and mix with the boiling water. Mix well until the jelly crystals have dissolved.
Step two
Combine the Passion Star cocktail ingredients in a mixing glass with ice.
Step three
Stir well for about 20-30 seconds, then strain.
Step four
Pour the cocktail mix into the jelly mix, stir well before dividing the mix between 10 martini glasses, and place the glasses into a fridge to set for 30 mins.
Step five
Prepare the passion fruit custard by mixing the cold Bird’s Custard with the passion fruit purée and set aside.
Step six
To prepare the vanilla cream cheese, split the vanilla pod and scrape the seeds out of the pods.
Step seven
Add the Bird’s Cheesecake Mix and milk into a mixing bowl along with the vanilla seeds.
Step eight
Using a mixer (with whisk attachment) or a handheld electric whisk, beat the cheesecake mix until smooth.
Step nine
Pour in the double cream and continue to whisk until soft peaks and then transfer the mix to a piping bag and refrigerate until required.
Step ten
Once the jelly has set, layer with equal amounts of passion fruit custard and top it with equal amounts of vanilla cream cheese.
Step eleven
Garnish with crushed meringue, half a fresh passion fruit and sprigs of mint.
