Sweet and Sour Sauce with Crispy Cod and Sweet Peppers

Ingredients

500ml oil
1.4kg cod, cut into chunks
200g McDougalls Flour Plain
400g breadcrumbs, panko
3 eggs
100ml milk
Pinch salt and pepper to season
3 red peppers, sliced
3 yellow peppers, sliced
6 spring onions, sliced
1kg Sharwood’s Sweet & Sour Sauce
750g rice

Method

Step one

Fill three separate trays , one with seasoned flour, one with egg and one with milk and breadcrumbs.

Step two

Coat the cod fillets in flour, egg and breadcrumbs.

Step three

In a large frying pan add the oil, heat to 180°C and quickly fry the peppers and spring onions, remove onto kitchen roll.

Step four

Cook the cod fillets in batches, until golden brown.

Step five

Cook the rice according to on pack instructions.

Step six

In a saucepan, heat the Sharwood’s Sweet & Sour sauce to a simmer.

Step seven

Serve the crispy cod topped with peppers and onions and the Sharwood’s Sweet & Sour Sauce on the side with the cooked rice.
