Cannellini Bean and Potato Mash with Truffle Oil

200g Smash Instant Mashed Potato
1l boiling water
2 x 400g tinned cannellini beans
100ml single cream
100g unsalted butter
3 tbs truffle oil
black pepper to season

Method
Step one
In a bowl place the Smash Instant Mashed Potato and pour over boiling water. Mix well then leave to stand for three minutes. Stir again.
Step two
Warm the beans, then drain and mash them. Add the cream and butter and gently warm together. Then stir through the prepared Smash and serve hot and drizzled with truffle oil to taste.
