Strawberry Cheesecake

Ingredients

For the Base
200g digestive biscuits
100g butter, melted
For the Filling
500g full-fat cream cheese
100g icing sugar
300ml double cream
1 tsp vanilla extract
300g strawberries, cut in half
For the Jelly Topping
40g McDougalls No Added Strawberry Jelly
300ml boiling water
100g fresh strawberries, sliced

Method

Step one

Crush the biscuits and mix with melted butter. Press into the base of a lined tray. Chill for 15 minutes.

Step two

Whisk cream cheese, icing sugar, vanilla, and cream together until smooth.

Step three

Place the strawberry halves around the edge of the tin. Spoon over the filling and smooth the tops. Chill for 1 hour.

Step four

For the McDougalls No Added Strawberry Jelly layer: arrange sliced strawberries in a separate tin the same size. Dissolve McDougalls No Added Strawberry Jelly in boiling water pour, over the strawberry and leave to set. When firm place on top off the cheesecake.

Step five

Slice to serve.
